Master mixologist David Wondrich loves his Manhattans, but the alcohol in those cocktails can be a bit much as the evening moves along. The solution is simple: substitute Oloroso Sherry for the whiskey in the Manhattan, which reduces the alcohol in the drink by about a third. The resulting drink is a Bamboo cocktail, which was first invented in New York in the 19th century. As Wondrich writes in the 2015 edition of his book Imbibe!, ‘The Bamboo looks like a cocktail, tastes like a cocktail, and punches like a six-year-old.’ He pours a jigger each of sweet white vermouth and Oloroso Sherry into a mixing glass, adds a few dashes of bitters, shovels in some ice, stirs, strains into a martini glass, and finishes with a lemon peel. The result is deliciously refreshing.
